FIELD: baking industry. SUBSTANCE: oven has a row of baking units 2 with chambers 2. The oven also has proofing unit 7 with a chamber. The chambers of all units are provided with steam moistening devices 4 and 8. The devices are in communication with water supply system 5 by means of pipelines provided with solenoid valves and timers for determining the amounts of water to be supplied to this or that chamber. Device 8 is also provided with delay system 8 for leveling humidity across the inner space of the chamber of proofing unit 7. Electric heaters 3 of baking chambers 2 are flat ceramic plates located in recesses in the lower and upper parts of the chambers. Water supply system 5 has a tank mounted in the upper part of the oven above the baking units. EFFECT: higher efficiency. 1 dwg
