FIELD: poultry processing industry. SUBSTANCE: process consists in displacement of the carcass on the conveyor and scraping the filet meat from the above-indicated sections by means of working members made as plates with a sharpened concave edge arranged from both the sides of the conveyor. Use is made of the working members whose sharpened edges are manufactured in the form of a dovetail, the top adjacent to the upper edge of the plate being positioned closer towards the carcass motion direction than the top adjacent to the lower edge. The plates are mounted for swinging relative to the vertical and horizontal axes and for sliding along the shoulder bone at the contact with the moving carcass.
