FIELD: gelatin industry. SUBSTANCE: decalcification of raw in gelatin production is carried out by preliminary washing of raw with water, neutralization with hydrochloric acid up to pH 5,6± 0,2 . Raw is treated additionally with solution of sodium or ammonium carbonate or phosphate or their mixture (0.2-0.5% of raw mass) in alkaline medium at pH 8.3-10.5, and washed with water finally. EFFECT: improved method of raw decalcification.
