FIELD: food industry, medical biochemistry, enzymology, agriculture. SUBSTANCE: method involves applying protein preparation to several points on filtering paper strip, treating some of samples with proteolytic ferment (pepsin, papain) and leaving the rest for control; after incubation all samples are colored with amid black 10B, then the protein-colorant complex is eluated, protein content determined in produced colored solutions by spectrophotometric method and digestibility of sample is assessed as a fraction of hydrolyzed protein expressed in percent of initial quantity.
