FIELD: dairy industry. SUBSTANCE: fat-free milk is condensed, dried on conduction drum-type drier under 0.3-0.6 MPa pressure of drier-heating steam, a temperature of 130-155 C of the drier surface, bringing the product moisture content to 4.5-12 followed by removing the film from the drum with lactose crystallizing in it for 15 300 s and crushing said film to a particle size from 0.2 to 2.0 mm. Final drying is carried out in an aerovibrating drying plant at an air temperature from 50 to 120 C within 2 to 25 min. EFFECT: higher efficiency.
