FIELD: fish industry. SUBSTANCE: device has a hold-down block carrying a vibrating knife. The block is mounted for slewing against a spring. As the block slews, the movement is used to pull the vibrating knife so that its blade finds itself behind a cutting edge provided on the input side of the block. This arrangement makes possible change of the kind of cutting during skinning after the start of operation of the vibrating knife.
