FIELD: wine-making industry. SUBSTANCE: method includes processing of grape to produce a fresh or slightly fermented extraction must, its alcoholization, clarification, separation of forming sediments with subsequent introducing the sediments separated from the alcoholized must, and blending of the alcoholized must with a dry wine stuff. The sediments separated from the alcoholized must are introduced, before the blending of alcoholized fresh or slightly fermented must with dry wine stuff, into the latter in proportion from 1:4 to 1:10. Finally, the after-fermentation of the sediment sugars with simultaneous digestion is carried out followed by separation of the wine stuff from the sediment. EFFECT: new method proposed. 2 cl
