FIELD: preparation of fruit juices. SUBSTANCE: invention is intended for usage at plants of primary processing of grapes to determine time of termination of clarification process of must in sedimentation vessels. Gear determining clarification time of must includes sensor-signaller, measurement circuit, differentiator and two computers. Output of measurement circuit is connected to input of differentiator and to second input of first computer. Output of differentiator is linked to first input of first computer. Signals corresponding to parameters of activating medium come to third input of first computer. Output of first computer is connected to input of second computer which output is connected to input of output device. EFFECT: enhanced operational reliability. 1 dwg
