FIELD: food processing industry. SUBSTANCE: for determination of residual quantity of synthetic cation flocculant its adsorption concentration is carried out with the aid of hydroxixantane pigment. Flocculant is then coagulated by alum-carrying coagulant forming white precipitate, (pH is corrected, if necessary to 7.0-9.0), is stirred, precipitated and filtered through paper filter. Finally visual colorimetry is conducted by comparison of color of filtered sample with color of filters of standard scale and residual quantity of flocculant is set equal to 0.01-0.14 mg/l. EFFECT: reduced time of determination, improved authenticity of method.
