FIELD: biotechnology. SUBSTANCE: method involves preparing sowing yeast by their culturing in molasses solution with addition of nitrogen, phosphorus and potassium-containing salts and biotin. Then yeast were separated, washed with water and treated with emulsion of stearic and palmitic acid polyglycerides as an emulgator followed by pressing and drying. The obtained yeast were used for sowing nutrient medium containing saccharified milled waste from baking production or stale bread. Ratio of waste and water = 1: (6-9).
