FIELD: fat and oil production. SUBSTANCE: hydrogenation of vegetable oil and fat is carried out in the presence of palladium catalyst which represents metallic palladium being supported on surface having pores 2-20 nm in size, quantity of palladium being 0.1-4.0 mass %. Carbon material having specific surface of pores 50-5000 m2/g and total volume of pores 0.2-1.7 cm3/g is used as carrier for said catalyst. Hydrogenation takes place at 80-200 C and at pressure of hydrogen 1.0-2.0 atm, concentration of catalyst (as calculated for metallic palladium) is 0.00015-0.0005 % of weight of oil.
