FIELD: baking industry. SUBSTANCE: method involves kneading dough by means of kneader-pump with built-in self-cleaning devices. Apparatus has at least one hopper 11 with salted flour, at least one yeast hopper 12, and device 20 for controlling amounts of components supplied from these hoppers. Device 22,23 is adapted for feeding under gravity of flour and yeast to kneader-pump 13,40 operating under atmospheric pressure. Water is supplied in required amounts to kneader-pump. Deformable pipeline 42 is adapted for continuous feeding of kneaded and mixed dough to cutting device 60 for forming doughs. Self-cleaning units are built in kneader-pump. Apparatus is further provided with device for cleaning pipeline 42 and cutting devices 60. Doughs receiving vessels 90 are rigidly connected with chains 91, which move vessels first along Z-shaped path in fermentation chamber 100 with following movement within oven 110. Device 120 controls tilting of vessels 90 and discharge of baked bread from vessels before vessels are repeatedly fed to dough delivery unit 55. Sizes of apparatus allow it to be transported by means of conventional lifting equipment to remote places.
