FIELD: food-processing industry. SUBSTANCE: method involves blowing raw plant material with heat-carrier flowing at rate of 5-15 m/s and simultaneously exposing it to infrared radiation with wave length of 0.7-2.5 microns in two stages: at the first stage at temperature not in excess of +78 C for 20 min to 6 hours; at the second stage at temperature not exceeding +62 C till final moisture content reaches 2-12%. Exposing to infrared radiation is performed through quartz filter. Dehydrated raw plant material obtained by such method is used for preparing different dishes by recycling in water with following thermal treatment.
