FIELD: wine making industry. SUBSTANCE: according to method, grape is crushed with comb separation. Introduced into pulp is liquid oak extract in amount of 0.02-0.05% of pulp weight with mass concentration of dry substances being equal to 60-72 g/cu.dm and total mass concentration of aromatic components of 10-20 g/cu.dm, and material is fermented. Must is left to stay on pulp during 1-2 days. Before this period of ageing, introduced into pulp is similar liquid oak extract in amount of 0.2-0.5% of weight, then it is separated from pulp on self-flow unit, pulp is finally pressed on press, fractions are combined and removed from sediment, processed and bottled. Application of aforesaid method ensures simplification of wine making technological process together with widening range of producing white table wines, and producing wines of stable quality for shorter periods. In addition, improved is alimentary value of wine and its organoleptic characteristics. EFFECT: higher efficiency. 2 ex
