FIELD: food-processing industry. SUBSTANCE: apparatus has transporting mechanism mounted on frame and provided with cassette holders, interiors removal device, guiding plates and rollers. Cassette has tentacle receiving grooves and carcass receiving groove positioned in spaced relation one with respect to the other. Grooves are fixed at different levels relative to holder and axially aligned with it. Two plates are attached to end part of tentacle receiving groove at side adjacent to gap between grooves for defining two-sided cavity. Carcass receiving groove is defined by two plates arranged in symmetry and fixed at their mid portions in inclined position relative to holder so as to define wedge-shaped slot. Rear part of carcass receiving groove has bevels sharpened toward groove base. Interiors removal device is positioned in each cassette under tentacle receiving groove and is made in the form of knife for cutting off squid pallium. Knife is mounted for displacement along cassette and rigidly connected through roller to perforated platform positioned in front of knife. Conveyor-type transporting device has at least two conveyor chains with equally alternating chain links having different working pitch. Conveyor chains are seated onto many-sided wheels. Apparatus is further equipped with device for stripping squid pallium from knife. Apparatus of such construction may be used for cutting squids of different sizes and kinds.
