FIELD: cleaning and disinfection of unit for treatment of foodstuffs. SUBSTANCE: described is method of cleaning and disinfecting the unit for treatment of food protein-containing foodstuffs which comprises treating surface with detergent composition of protease enzyme with low foam formation and denaturating active protease with oxidizing agent. Described is stabilized, block, fermented detergent composition with low foam formation comprising 10-90 wt % of hardening agent, effective amount of enzyme, amount of stabilizing composition dispersed in water which is effective for stabilizing enzyme. Composition comprises water hardness sequestrant, modifying salt-like additive and surfactant. Also described is fermented detergent composition in the form of particles of said composition which includes no hardening agent. EFFECT: effective removal of contaminant resistant to standard treatment, and elimination of chemical compounds which are used in treating foodstuffs. 16 cl, 2 dwg, 29 ex, 11 tbl
