FIELD: food engineering. SUBSTANCE: apparatus has two pairs of disk-type knives, with one pair adapted for cutting fish carcass along back to spine and other pair for cutting fillets along previously made cuts, pressure planks for rib bones, and toothed disk for gripping and moving fish carcass by spine at side adjacent to abdominal cavity. Toothed disk has enlarged diameter allowing curvilinear motion of fish carcass on disk to be straightened almost to straight-line motion along the entire filleting length. Apparatus is provided with side pressure flaps for precise positioning of fish carcass on disk prior to filleting, and with forked flap for pressing fish carcass to disk teeth at side adjacent to fish back. Striker is used for deflecting rib and spinal bones together with black film remaining between cutting knives after separation of fillets. EFFECT: increased efficiency by preventing fish fillets from mechanical damage. 2 cl, 5 dwg
