FIELD: biotechnology, food industry. SUBSTANCE: invention relates to preparing biologically active substances and can be used for preparing inulin-base biologically active food additions or valuable components of nutrition. Method involves extraction of fructans with hot saline solution followed by filtration and depigmentation of prepared extract on anionite. Then method involves concentration of fructans, precipitation of high-molecular fructans from preliminary heated concentrate with solvent, preferably, ethyl alcohol taken in volume = 1.5- -2.5 of concentrate volume, filtration, washing out with ethanol and vacuum-drying of ready product. Method provides preparing inulin of molecular mass 7000-10000 Da and accompanying preparing valuable fructose-containing products.
