FIELD: dairy industry, particularly, production of milk-protein concentrates. SUBSTANCE: method involves introduction in pasteurized cooled milk raw material of colloid solution of chitosan with pH 4.2-4.8 prepared on milk base. It is mixed and aged up to 30 min, and precipitated in residue protein substances are separated by one of known methods.
