SUBSTANCE: method involves extracting bitter substances from citrus fruits by means of non-polar liquefied gas; treating citrus fruits with preparation produced from Mortierella jenkinii biomass by means of non- polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, and joining first extract with solid residue, said preparation being used in an amount of 0,5-1•104 mg/t; holding and impregnating with liquefied ammonia under pressure above atmospheric pressure value, with following releasing of pressure to value equal to atmospheric pressure at rate providing freezing of fruits.
