FIELD: wine-making industry.
SUBSTANCE: invention can be used in manufacturing sparkling wines by continuous method. Method for manufacturing sparkling wine in continuous flow involves blending wine materials, preparing diluted suspension of the natural dispersed mineral and diluted yeast, addition an aqueous suspension of natural dispersed mineral to the blend in tank containing filling agent in the process for feeding blend and diluted yeast to its. Then method involves clearing, filtration and biological remove oxygen of blend that is carried out in this tank with simultaneous stirring the blend with diluted yeast and dispersed mineral and passing the mixture flow through a filling agent representing glass granules with specific square 10.8-13.7 m2/dal/h. An aqueous suspension of natural dispersed mineral is added into tank as separated doses or doses mixed preliminary with diluted yeast. Blend is subjected for pasteurization, champagnizing, bioregeneration, filtration of wine and its holding by the known method. Proposed invention provides the enhanced effectiveness of clearing processes, biological remove of oxygen, filtration of wine and regeneration of filling agent packs and the improvement of taste properties and qualitative indices of wine, reduced energy consumption, labor intensity, amount of equipment and industrial squares, loss of product (wine) and its cost.
