SUBSTANCE: invention relates to technology for isolating pectin from the vegetable raw. Method involves separate milling sunflower heads and citrus husks, their successive extraction with acetone firstly and then after separation of extract solid phases are extracted with mixture of liquid acetylene and carbon dioxide taken in the ratio by mass from 3:7 to 7:3 followed by hydrolysis-extraction of mixture, separation of liquid phase and isolation of the end product from its. Invention provides enhancing quality of the end product due to elimination of undesirable taste and odor being without deterioration of its technological properties and without reducing the specific yield of pectin.
