FIELD: production of jellying concentrate containing plant or microbial-type texturizers.
SUBSTANCE: method involves preparing sugar beet roots and providing thermal deodorization with carbon dioxide; squeezing for producing juice and pomace; performing hydrolysis of pomace while separating liquid phase and blending the latter with juice; introducing liquid ammonia into blend; providing vacuum evaporative concentration and processing concentrate with liquid carbon dioxide; heating to temperature of at least 60°C. Thermal deodorization process is performed with the use of carbon dioxide at above-critical state in ultrasonic vibration field while beet is simultaneously sterilized. Squeezing process is provided under aseptic conditions. Pomace hydrolysis process is performed by joint cultivation thereon of Trichoderma and Aspergillis micellar fungi of citric acid fermentation. Simultaneously with ammonia, extract produced after extracting of Mortierella zychae micromycet biomass is introduced into blend in an amount of about 2% by weight of dry substances, said extraction procedure being provided with the use of carbon dioxide at above-critical state. After extracting with carbon dioxide in above-critical state, said biomass is sequentially extracted with water, alkaline, water, acid, water, alkaline and water. Resultant solid residue is treated with liquid ammonia and introduced into concentrate preliminarily treated with liquid carbon dioxide in an amount equivalent in consumption of biomass to amount of extract introduced into blend simultaneously with liquid ammonia.
EFFECT: increased yield of base product and improved texturizing properties.
