SUBSTANCE: method involves preparing fruit elder by using texturizer such as mixture of carragheenan and preparation produced from Mortierella lignicola micromycet biomass by predetermined process, said components being used in the weight ratio of 4:3.
EFFECT: reduced laying of texturizer and provision for keeping of structural-mechanical and organoleptical properties of base product.
