FIELD: confectionery industry, in particular, process for obtaining of soft caramel.

SUBSTANCE: method involves mixing and boiling at least sweet substance, plasticizer, emulsifier and structurizer until predetermined content of dry substances is reached, with mixture of soluble edible salt of polybasic acid and specific preparation being used as emulsifier and structurizer. Said preparation is produced by sequential extraction of Mortierella dichotoma micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue. Ratio of said salt and biomass preparation used is close to equivalent ratio with regard to valence of acid residue of said salt and number of free hydroxyl groups of said preparation. Using the mixture of soluble salt of polybasic acid with preparation produced from Mortierella dichotoma micromycet biomass by predetermined process allows said mixture to be used as substitute of structurizer and emulsifier.

EFFECT: reduced consumption of structurizer and emulsifier.
