SUBSTANCE: fruit sambuk is produced by using as structure formation agent carragheenan and preparation obtained from biomass of Mortierella strangulata micromycete according to claimed technology in mass ratio of 4:3.

EFFECT: reduced consumption of structure formation agent without losses of structural, mechanical and organoleptic characteristics of target product.
