SUBSTANCE: carbohydrate-containing jellying concentrate is prepared by squeezing out juice from sugar beet prepared and deodorized with supercritical carbon dioxide, extracting residues in mixing in extractive volume of water and liquid hydrogen chloride, blending juice and extract followed by addition to the blend liquid ammonia and supercritical CO2-extract from biomass of micromycetes Mortierella globalpina. Then biomass is extracted by the known technology for preparing a solid residue that is treated with liquid ammonia, concentrating the blend, treatment of the concentrate with liquid carbon dioxide, mixing with treated solid residue of biomass of micromycetes Mortierella globalpina and heating the mixture to temperature 60°C, not less. Invention provides preparing the concentrate with the improved structural-forming capacity and enhanced thermal stability.
