SUBSTANCE: method involves preliminarily grinding raw meat material; providing fine grinding of raw meat material combined with mixing and cooling operations. Raw meat material is cooled by means of snow-like mass produced from carbon dioxide supplied under pressure into cutter through apertures in cutter head.
EFFECT: prolonged shelf life of farce and increased stability of color of end product.
