FIELD: canned food industry.
SUBSTANCE: method involves extracting dry Pythium irregulare micromycet biomass with the use of non-polar extractant in above-critical state; separating first extract for further usage thereof in producing of preparation; sequentially extracting biomass with the use of water, alkaline, water, acid, water, alkaline, and water; thereafter, joining solid residue with first extract for producing of preparation; washing and inspecting potatoes and treating with resultant preparation used in an amount of 0.7-1·105 mg/t and holding for about 5 hours; providing cleaning, additional cleaning and cutting of potatoes; frying cut potatoes to moisture losses not in the excess of actual frying losses and not less than those before inactivation of native enzymes; packaging and freezing. Method allows base product with smaller crumbling extent to be obtained, in particular, amount of crumbled pieces of potato is on the average 9-3%.
EFFECT: improved organoleptical properties of base product having consistency approaching that of dish prepared from fresh potatoes.
