FIELD: milk industry, in particular, curd making equipment.
SUBSTANCE: curdmaker has cylindrical multiple-layer reservoir provided with heat-insulated wall and adapted for resting upon columns. One of reservoir layers has heating and cooling units embracing reservoir from diametrically opposite sides. Located on end wall of reservoir is reservoir filling and discharging device, multiple-level whey separation device made in the form of connection pipes united by means of single pipeline and provided with valves, and viewing windows and temperature sensors. Provided in upper part of reservoir is charging device made in the form of hatch incorporating grid and blocking sensor connected therewith, and also washing device. Curdmaker reservoir has cutting-mixing mechanism positioned within it and equipped with drive having reducer with shaft bearing working tools made in the form of equally spaced apart blades positioned along shaft, in offset relation along helical line. Blades made in the form of curved plates are fixed on spaced apart blades at an angle to their longitudinal axis. Working surface of knives provided at outer end of blades is oriented in direction of rotation of blade. Curdmaker has control system cooperating with heating and cooling units, temperature sensors and drive of cutting-mixing mechanism.
