FIELD: production of coffee substitutes, in particular, processes for producing of powdered soluble chicory-based beverage concentrates.
SUBSTANCE: method involves introducing natural stevioside-kind sweetener into concentrated chicory extract containing 35-40 wt% of dry substances, said sweetener being used in the form of solution with weight ratio of dry substances making 40-50% in an amount of 2.0-1.6% by weight of dry substance of concentrated chicory extract; drying resultant mixture. Air temperature at inlet end of drying unit is 130-150 C, at outlet end - 85-95 C. Final moisture content of ready product is 3-5%. Method allows bulk, powdered, high-dispersion, readily soluble product (content of particles sized up to 20 microns constituting not less than 98%) having homogeneity coefficient of 1 to be obtained, and duration of process to be reduced by 15%.
EFFECT: improved quality of beverage, reduced losses of biologically active substances of kvass mesh concentrate upon drying, and reduced process time.
