FIELD: food industry.
SUBSTANCE: method includes processing of fruit packed in the cans by microwave frequency field during 50-60 seconds before syrup filling. Fruit are covered with syrup heated up to temperature of 80-85°C. The filled cans are sealed and sterilised in autoclave.
EFFECT: ensures significant saving of heat energy and water consumption.
