FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Method provides for inspection and washing of beet roots, peeling, milling and drying. Drying is performed in several stages with following frying at temperature 100-110°C, cooling, milling and bolting. At the first stage drying is performed at temperature 70-75°C till moisture content 55-60%, at the second stage - at temperature 75-80°C till moisture content 25-30% and at the third stage - at temperature 85-90°C till moisture content 5-8%. Cooling is performed till temperature 20-23°C.
EFFECT: invention allows to obtain product for dietary and preventing feeding, used as substitute for coffee.
