SUBSTANCE: invention relates to technology of manufacturing coffee substitute. Production method of instant powder for girasol-herbal beverage provides for extraction of nutmeg flowers by liquid nitrogen with corresponding miscella separation, preparation of girasol, its cutting, drying in microwave field at preset process parametres and frying, rye grain frying, mixing of girasol and rye grain in mass ratio 7:3, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method provides for production of coffee drink according to nonwaste technology.
