FIELD: food industry.

SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method provides for extraction of tangerine peels by liquid nitrogen with corresponding miscella separation, chicory preparation and cutting, its drying in microwave field till residual humidity about 20% at microwave field power providing warming of chicory inside the bits till temperature 80-90°. After that drying of peach refuses in microwave oven till residual humidity about 20% at microwave filed power providing warming inside the bits till temperature 80-90° is performed during at least an hour and drying till residual humidity about 5% by convective method. Chicory and peach refuses are mixed in mass ratio 3:2, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.

EFFECT: invention allows to obtain new coffee substitute with increased organoleptic properties according to nonwaste technology.
