FIELD: food industry.
SUBSTANCE: instant powder is obtained by extraction of cocoa husks by liquid nitrogen with corresponding miscella separation, preparation of chicory, apples and chokeberry. Cutting and drying of chicory and apples is performed in microwave field till residual humidity about 20% at microwave field power providing warming of apples and chicory inside the bits till temperature 80-90°C during at least an hour. Drying is performed in microwave oven till residual humidity about 20% at microwave field power providing warming of chokeberry inside the berries till temperature 80-90°C during at least an hour. Chicory is fried, apples and chokeberry are dried till residual humidity about 5% by convective method. Chicory, apples and chokeberry are mixed. Obtained mixture is impregnated by separated miscella performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: invention allows to obtain new coffee substitute with increased organoleptic properties according to nonwaste technology.
