SUBSTANCE: invention refers to process of coffee substitutes production. The method of manufacture of instant powder for aromatised yacon-malt drink consists in the following: in preparing recipe components, in extracting orange rind with liquid nitrogen and in separating corresponding miscella, in cutting yacon, in its drying in field of SHF to residual moisture about 20%, while field of SHF should facilitate heating of yacon to temperature inside pieces 80-90°C during not less 1 hour, in its roasting, in roasting barley malt, in mixing yacon and barley malt at weight ratio 7:3, in charging produced mixture into cryo-mill, in soaking the mixture with separated miscella at simultaneous pressure build-up to a value corresponding to pressure of saturated vapours of nitrogen at temperature of soaking, in pressure drop to atmospheric with simultaneous freezing of mixture and in cryo-milling it in medium of precipitated nitrogen.
EFFECT: method facilitates manufacture of new aromatised coffee drink out of non-traditional raw material by non-waste technology
