FIELD: food industry.
SUBSTANCE: invention refers to food industry, particularly to process of compote production. Method of production of compote out of peaches consists in preparing recipe components, in cutting and drying of yacon in SHF field, in roasting and crumbling of yacon and in roasting of barley malt. Further there are performed mixing of yacon and barley malt, extracting of produced mixture with drink water, filtering of obtained extract and producing syrup out of it. Peaches and syrup are pre-packed, hermetically sealed and sterilised.
EFFECT: disclosed method facilitates production of compote with coffee nuance of taste and aroma, simplification of process and reduction of boiled pieces of peaches in desired product.
