FIELD: food industry.
SUBSTANCE: invention relates to technologies of canned compotes manufacturing. The method provides for preparing the ingredients, cutting and drying in a microwave field at preset process parametres, roasting and crushing girasol, drying barley grain. The girasol and barley grain are mixed in the mass ratio 7:3. The obtained mixture is extracted with drinking water at preset process parametres. The obtained extract is filtered. A syrup is cooked out of it. Pears and the syrup are packed, vacuum-sealed and sterilised.
EFFECT: production of compote with a coffee flavour and taste without actual coffee content in the recipe and simplified technology.
