FIELD: food industry.
SUBSTANCE: method of production of the strawberry compote providing for preparing the ingredients as well as a syrup out of the extract, packing the strawberry and the syrup, sealing and sterilising, whose difference is in the fact that the prepared chicory is cut, dried in the microwave field for 1 hour minimum until the chicory residual humidity is about 20% at the microwave field power providing warming the chicory inside the bits to 80-90°C, then the chicory is roasted and milled. The prepared chestnuts and soya are roasted and milled, barley grain is roasted. The prepared barley grain is roasted and mixed with chicory, chestnuts and soya in the mass ratio 7:7:2:4. The obtained mixture is extracted with drinking water in the phase ratio 1:(6-7) and at periodic pressure releases in the extraction mixture until water boils. The obtained extract is separated and filtered until dry substances content is 66-70.5%. Thermal treatment is performed until industrial sterility is reached.
EFFECT: industrial sterility is achieved.
