FIELD: food industry.
SUBSTANCE: invention relates to brewing technology. Lemon-balm and hops are mixed in ratio of 1:10 and extracted by means of liquid nitrogen with miscella separation. Chicory is cut, dried in a microwave oven at preset process parametres till residual humidity of about 20%. Chicory and malt are mixed in mass ratio of 1:(40-60) and loaded into cryomiller shell. Obtained mixture is impregnated by separated miscella with simultaneous pressure boost. After the impregnation the pressure is released and the mixture is frozen. The mixture is cryomilled in medium of evolved nitrogen. The cut mixture is filled with water and then saccharificated. Brewer's yeast is added to the wort obtained, incipient fermentation is performed and beer is filtered.
EFFECT: reduced process technology duration and improved foam stability of the target product.
