FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components, extracting dill seeds using liquid nitrogen with correspondent miscella separation. The girasol is cut, dried in a microwave field at given process parametres and roasted. Barley grains, chestnuts and soya beans are roasted. The girasol, barley grains, chestnuts and soya beans are mixed together. The obtained mixture is impregnated with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: method enables to obtain instant powder for making a flavoured coffee drink using a waste-free technology.
