SUBSTANCE: invention relates to technology used to produce coffee substitutes. Formula components are prepared using traditional technology. Anisetree is extracted with liquid nitrogen, and according miscella is separated as per traditional technology. Prepared girasol-sunflower hybrid is cut and dried in microwave field at specified parametres of the process. Girasol-sunflower and barley malt are fried as per traditional technology. Girasol-sunflower and barley malt are mixed in the mass ratio of 7:3. Produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Produced mix is cryo-ground in medium of released nitrogen to produce target product.
EFFECT: invention makes it possible to improve organoleptic properties of drink and to produce flavoured coffee drink from non-traditional raw materials according to wasteless technology.
