FIELD: chemistry.

SUBSTANCE: invention refers to brewing procedure. Method involves mixing of caraway and hop. The obtained mixture is extracted with liquid nitrogen with separation of appropriate miscella. Cutting, drying in microwave field at specified parametres of process and roasting of chicory is performed. Chicory is mixed with malt. The obtained mixture is saturated with separated miscella with simultaneous pressure increase. Pressure is released to atmospheric with simultaneous freezing of mixture. There performed is cryocrushing of mixture in the atmosphere of separated nitrogen. Mixture is filled with drink water and saccharified so that mash is obtained. Brewers yeast is added to mash. Main fermentation, after-fermentation and filtering is performed.

EFFECT: method allows reducing the duration of process and increasing the resistance of foam of the product.
