FIELD: chemistry.

SUBSTANCE: invention relates to beer brewing technology. Method involves mixing dill seeds and hop, extraction of the obtained mixture with liquid nitrogen with separation of the corresponding miscella. Chicory is cut, dried in a microwave field at given process parametres and roasted. The chicory is mixed with malt. The obtained mixture is impregnated with the separated miscella with simultaneous increase of pressure. Pressure is decreased to atmospheric pressure level with simultaneous freezing of the mixture and cryogenic grinding in a medium of released nitrogen. Drinking water is poured and saccharification is carried out to obtain wort. Brewing yeast is added and primary fermentation, fortification, after fermentation and filtration are carried out.

EFFECT: invention shortens duration of the process and increases foam stability of the end product.
