FIELD: chemistry.
SUBSTANCE: invention relates to beer brewing technology. The method involves mixing lemon balm and hop, extraction of the obtained mixture using liquid nitrogen with separation of the corresponding miscella, cutting, drying in a microwave field with given process parametres and roasting chicory, mixing chicory and malt, impregnating the obtained mixture with the separated miscella with simultaneous increase of pressure to a value corresponding to pressure of saturated nitrogen vapour at impregnation temperature, reducing pressure to atmospheric pressure level with simultaneous freezing of the mixture, cryogenic grinding in the medium of the released nitrogen, pouring drinking water and saccharification to obtain wort, addition of brewing yeast, primary fermentation, fortification, after fermentation and filtration.
EFFECT: invention shortens duration of the process and increases foam stability of the end product.
