FIELD: food industry.
SUBSTANCE: group of inventions relates to technology used in production of diet flour confectionary products for nutrition of diabetes patients. Method provides for preparation of formula components, cutting of girasol, its drying in microwave field at specified parametres of the process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Dough is made from prime wheat flour, flour produced from girasol, yolks, salt, soda, vegetable oil, phospholipids and water, its moulding in the form of sheets and baking. Girasol or girasol-sunflower hybrid or yacon or chicory is cit, dried in microwave field at specified parametres of the process, fried and cryo-ground in liquid nitrogen to produce flour, its mixing with sugar substitute "Sladeks" and waffle crumb to make filling. Waffles are shaped from sheets and filling.
EFFECT: produced diabetic waffles have improved consistence and coffee taste and flavour with no coffee added to the formula.
