SUBSTANCE: invention is related to food industry, namely to coffee substitutes production. Method provides for extraction of almond flowers by liquid nitrogen with corresponding miscella separation, preparation of yacon, its cutting, drying in microwave field at preset process parametres and frying, drying of lemon refuses by convective method, mixing of yacon and lemon refuses, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: invention enables to obtain flavoured coffee drink instant powder out of unconventional raw material according to nonwaste technology.
