FIELD: food industry.
SUBSTANCE: group of inventions refers to technology of dietary flour confectionery products production for diabetic people. For dough preparation mix a flour from yacon, received by it's cutoff, drying in the microwave oven at the set process parametres, completion of drying by convective method and cryo disintegration in liquid nitrogen, wheat flour of premium quality, yolks, salt, soda, vegetable oil, phospholipids and water. The dough in the form of sheets is baked. For filling preparation cut girasol or girasol-sunflower, or yacon, or chicory, dry in the microwave oven at the set process parametres, fry and provide cryo disintegration in liquid nitrogen with flour getting which mix with culinary fat, sugar substitute "Sladeks" and a waffle crumb. The waffles are formed from received sheets and filling.
EFFECT: received dietary waffles possess improved consistence both coffee taste and aroma in default of coffee in recipe.
