FIELD: chemistry.
SUBSTANCE: invention relates to beer brewing technology. The method involves mixing chinese magnolia and hop, extraction of the obtained mixture with liquid nitrogen and separation of the corresponding miscella, cutting, drying in a microwave field at given process parameters and roasting girasol-sunflower. Further, girasol-sunflower is mixed with malt. The obtained mixture is saturated with the separated miscella while simultaneously increasing pressure to a value which corresponds to pressure of saturated nitrogen vapour at saturation temperature, releasing pressure to atmospheric level with simultaneous freezing of the mixture, its cryogenic grinding in a medium of the released nitrogen, pouring water and saccharification to obtain wort. Brewing yeast is then added and primary fermentation, after fermentation and filtration are then carried out.
EFFECT: invention shortens duration of the process and increases foam stability of the end product.
